
My relationship with salt is a long and affectionate one. When I was small I would grind salt onto the table, just to lap it up like a starved kitten. Salt is something I use everyday. It is an ingrediant i could not live without. Until recent years I thought that salt was ... well.. salt - no 'types' or 'species', just coarse or fine. Well, I've traveled more and gone to metropolitan markets, have come to taste and experience all that is salt.
We recently added a PILLAR OF SALT to PFI. Perhaps you've already seen the news here on the site. My favorite of the salts we carry is the Cyprus Flake. It absorbs quickly and has a texture that melts on the tongue. Use it to finish an appetizer or serve on fresh piece of Sockeye.
