Pasta is often the bed upon which we present or feature other foods. Whether it be clams "vongole" or artichokes "ai carciofi" the pasta is always their reliable vehicle. The Italian romance and love for food is no myth and it is reflected in their mastery of pasta.

Tomatoes are the Sid to Pasta's Nancy - an essential and historic pairing. Strianese whole canned tomatoes are flavorful and robust. In my experience some canned goods pick up an odd taste over time, but this hasn't happened with these tomatoes.  I am loyal to Strianese and I regularly enjoy their reliability and natural flavor. Their cherry tomatoes are another great ingrediant. They are firm and with a subtle sweetness, just as they should be.

My relationship with salt is a long and affectionate one. When I was small I would grind salt onto the table, just to lap it up like a starved kitten. Salt is something I use everyday. It is an ingrediant i could not live without. Until recent years I thought that salt was ... well.. salt - no 'types' or 'species', just coarse or fine.  Well, I've traveled more and gone to metropolitan markets, have come to taste and experience all that is salt.

We recently added a PILLAR OF SALT to PFI.  Perhaps you've already seen the news here on the site.  My favorite of the salts we carry is the Cyprus Flake. It absorbs quickly and has a texture that melts on the tongue. Use it to finish an appetizer or serve on fresh piece of Sockeye.
